In a small bowl: combine BBQ dry rub together.

Use ¼ cup for ribs and save the rest of the rub for later use. 

Clean and pat the ribs dry with a paper towel. Place the ribs meat side down on the cutting board. Pull the skin membrane off the back of the ribs and discard it. Coat both sides of the ribs with BBQ rub (¼ cup).

Cut the rib in half, so you can fit the ribs in the air fryer basket. Preheat the air fryer to 360°F. Press the time button for 55 minutes. 

Place the ribs in the air fryer basket.

Cook for 50 minutes

Make sure to flip after 25 minutes

Generously baste the ribs with your favorite BBQ sauce. Continue to cook for another 5 minutes. 

Remove the ribs from the basket and baste with sauce again (optional). Cool for 10 minutes before cutting. Place the ribs on a cutting board and cut between the bones.

Ingredients
  

  • 4 lbs St. Louis Ribs or baby back ribs
  • ¼ cup BBQ rub
  • ½ cup BBQ sauce

Homemade BBQ Rub

  • cup brown sugar
  • 1 tbsp smoke paprika
  • 1 tbsp ground mustard
  • 2 tsp chili powder
  • 2 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ¼ tsp ground cayenne pepper

Instructions
 

  • Preheat the air fryer to 360°F. Press the time button for 55 minutes.

    Clean and pat the chicken dry with a paper towel. Then, place them in a bowl. Add the baking powder mixture and combine everything until the poultry is well coated.

    Place the chicken in the air fryer basket. 

    Air Fry for 25 minutes

     (flip after 12 minutes) or until the skin is crispy and golden brown . 

    In a separate bowl: combine buffalo sauce, melted butter & honey. Mix everything together until combined.

    Transfer the cooked wings to a bowl. Pour the buffalo sauce over the wings.

    • 6 whole chicken wings
    • 2 tsp baking powder no aluminum
    • ½ tsp salt
    • ½ tsp garlic powder

      Dutch Oven Hearty Beef Stew

      Nothing is better than a Hearty Beef Stew. Braised beef and onion are some of my favorite ways to unleash natural appeal to the cooking process. The kitchen starts to warm up from the cooking and the tantalizing aromas promised. Chuck is the preferred choice of meat as it does not get stringy. This recipe is perfect for prepping the “preliminaries” ahead of time and then combining the final fixings just prior to serving. This approach to creating a hearty meal covers some of the most succulent methods for flavor profiles and texture development.

      I work to compress recipes into a short video with easy to follow recipes. However, I would like to acknowledge the giant that came before us that is the inspiration of this recipe. Try this dish and taste the elegance of this simple hearty stew.

      Pat the beef dry and place in a large bowl. Coat with salt, pepper and mix. 

      Heat the dutch oven or pot to medium-high. Add 2 tbsp oil and wait until hot. Place half of the beef in the dutch oven/pot and sear all sides for 3-5 minutes or until brown (do not over crowd the meat). Remove the beef and set aside. Repeat this step with the other half of beef & remove.

      In the same dutch oven/pot: add ¼ cup butter and wait for 30 seconds. Add onions & sauté for 5-6 minutes.

      Add garlic and sauté for 30 seconds.

      Add tomato paste, Worcestershire sauce and mix everything together. Sauté for 2-3 minutes. Sprinkle flour and mix everything together. Pour red wine and deglaze the bottom of the pot. Turn up the heat to high and bring to a simmer.

      Return seared beef to the pot. Pour in beef broth. Add chopped carrots & potatoes. Do not stir. Add herb bouquet: thyme, bay leaves & rosemary. Cover the pot with a lid. Place the dutch oven/pot in the middle rack of the oven.

      Cook for 5 minutes at 400°F (make sure to have the timer on). Then, turn down the oven to 325°F. Cook for 2 ½ – 3 hours or until the meat is fork tender Remove pot from oven. Discard herb bouquet. Gently stir the everything together with a wooden spoon.

      Add 4 tbsp cold butter (not softened). This is called Monter au Beurre in French, sauce with butter. Gently stir everything together until the butter is fully melted.

      Season with salt & pepper to taste if needed.

      Serve with French bread. Enjoy!

      • 3 – 3½ lbs chuck roast cut into 2"x2"
      • 3 cups unsalted or low-sodium beef broth/stock
      • 1 cup red wine Merlot, Pinot Noir, or Cabernet Sauvignon
      • ½ cup unsalted butter divided
      • 4 tbsp flour
      • 3 tbsp tomato paste
      • 2 tbsp Worcestershire sauce
      • 2 tbsp extra virgin olive oil
      • 2 tsp salt
      • 1 tsp black pepper
      • 2 lbs Yukon potatoes cut into 1" cubes
      • 5 carrots peeled & cut into 1"
      • 6 garlic cloves minced
      • 1 large sweet onion chopped

      Herb Bouquet

      • 3 sprigs rosemary
      • 3 sprigs thyme
      • 2 bay leaves

      Instructions
       

      • Preheat the oven to 400°F. Pat the beef dry and place in a large bowl. Coat with salt, pepper and mix.

          Shrimp 

          In a medium bowl: combine shrimp, buttermilk, hot sauce, 1 tbsp cajun seasoning and mix well. Cover and marinate for 30 minutes.

          In a shallow dish: add flour, cornmeal, 2 tbsp cajun seasoning and mix. 

          Remove marinate shrimp from the refrigerator. Dip the each shrimp into the cornmeal mixture.

          Transfer the shrimp to a plate/baking sheet.

          Pour 3-4 cups of oil into pan and heat to medium-high (350°-360°F). Wait until it reaches the temperature before adding the shrimp. Cooking in batches; cook the shrimp in the oil for 2-3 minutes per-side or until golden. Do not overcrowd the shrimp.

          Transfer the cooked shrimp to a baking rack. Repeat steps for rest of the shrimp. 

          Remoulade Sauce 

          Place garlic, onions, parsley, green onion in a food chopper. Chop for 45-60 seconds until minced.

          Add the rest of the ingredients and blend until smooth.

          Assemble 

          Toast Bread – Preheat the oven to 300°F (148°C). Slice the bread in half (vertically). Spread melted butter/ mayo on the inside of the bread. Lay the bread butterside down on a baking pan. Bake for 2-3 minutes. Remove bread from the oven.

          Prepare Sandwich – smear a generously amount of remoulade on the bread. Add lettuce, tomatoes & fried shrimp on top. Drizzle more remoulade sauce. 

          Serve & Enjoy!

          • 2 lbs x-large or jumbo shrimp
          • 1 cup buttermilk
          • 1 tbsp hot sauce
          • 3 tbsp (divided) cajun seasoning
          • 1 ½ cups all-purpose flour
          • 1 cup cornmeal

          Remoulade Sauce

          • 1 cup mayonnaise
          • ¼ cup chopped onions
          • ¼ cup green onions
          • ¼ cup chopped parsley fresh
          • 3 tbsp ketchup
          • 2 tbsp prepared horseradish
          • 2 tbsp dijon mustard
          • 2 tbsp creole mustard
          • 2 tbsp lemon juice
          • 1 tbsp hot sauce
          • 1 tsp salt
          • ¼ tsp black pepper
          • ¼ tsp ground cayenne pepper
          • 3 garlic cloves

          Instructions

            BBQ Pulled Pork

            Preheat the oven to 425°F. Wrap the baking sheet in aluminum foil for easy cleaning later. Place a baking rack on the baking sheet. In a small bowl: combine seasoned salt, black pepper and mix. In a separate bowl: add water & liquid smoke together.

            Clean, rinse & pat dry the pork with paper towel. Use about 2 ft long heavy duty aluminum foil. Place the boston butt in the center of the foil.

            Coat all sides of the pork with seasoning salt mixture. Wrap the butt with the foil. Place the wrapped pork on the baking rack. Pour the liquid smoke water in the bottom of the pan. 

            Cook at 425° for 30 minutes. Then, turn down the temperature to 225°F and cook for 6 hours. Remove pork from the oven. 

            Serve: Turn up the oven to 350°F. Transfer the pork to a cutting board. Chop the pork into pieces.

            Place chopped pork in a large bowl. Add BBQ sauce and mix everything together until well coated.

            Place serving amount of pork on aluminum foil. Cover and cook for 30 minutes. 

            BBQ Sauce

            In a sauce pan: add all the BBQ sauce ingredients and mix. Bring to a simmer and turn down the heat to low. Cook for 10 minutes or until sauce is reduce in half, continue to stir throughout.

            Assemble 

            Toast Bun – Preheat the oven to 300°F (148°C). Spread melted butter/ mayo on the inside of the bread. Lay the bread butterside down on a baking pan. Bake for 2-3 minutes. Remove bread from the oven. Add a warm BBQ pulled pork to the buns. Serve a side of pickle, chips or fries.

            Texas Roadhouse BBQ Pulled Pork

            Ingredients
              

            • 7-8 lbs boston butt (boneless or bone-in)
            • cup seasoned salt
            • 2 tbsp liquid smoke
            • 1 tbsp black pepper
            • 1 cup water

            Texas Roadhouse BBQ Sauce

            • ½ cup white vinegar
            • ½ cup water
            • ½ cup tomato paste
            • ½ cup granulated sugar
            • 2 tbsp vegetable or canola oil 
            • 2 tbsp honey
            • 1 tbsp onion powder
            • 1 tbsp Worcestershire sauce
            • 1 ½ tbsp molasses
            • 2 tsp salt
            • 1 tsp liquid smoke
            • 1 tsp paprika
            • 1 tsp whiskey
            • ¼ tsp garlic powder
            • ¼ tsp black pepper
            • tsp paprika

            Instructions
             

            BBQ Pulled Pork

            • Preheat the oven to 425°F. Wrap the baking sheet in aluminum foil for easy cleaning later. Place a baking rack on the baking sheet.
            • In a small bowl: combine seasoned salt, black pepper and mix. In a separate bowl: add water & liquid smoke together.
            • Clean, rinse & pat dry the pork with paper towel. Use about 2 ft long heavy duty aluminum foil. Place the boston butt in the center of the foil. Coat all sides of the pork with seasoning salt mixture. Wrap the butt with the foil. Place the wrapped pork on the baking rack. Pour the liquid smoke water in the bottom of the pan.
            • Cook at 425° for 30 minutes. Then, turn down the temperature to 225°F and cook for 6 hours. Remove pork from the oven.
            • Serve: Turn up the oven to 350°F. Transfer the pork to a cutting board. Chop the pork into pieces. Place chopped pork in a large bowl. Add BBQ sauce and mix everything together until well coated. Place serving amount of pork on aluminum foil. Cover and cook for 30 minutes.
