Oven Pork Loin with Potatoes & Carrots

Oven Pork Loin with Potatoes & Carrots features a very tender and juicy meat that and deliciously tasty vegetables for a balanced meal. In a bowl: combine salt, pepper, garlic, onion, thyme, rosemary and mix.

Clean and pat the pork dry with a paper towel. Coat 2 tbsp of extra virgin olive oil all over the pork.

Then rub the seasoning mixture all over the pork.

Place pork in the middle of the baking sheet. Cook for 5 minutes for 425°F. 

Meanwhile; place cleaned & cut potatoes in a bowl. Add 2 tbsp extra virgin olive oil. Season with salt & pepper. Mix everything together.

 Remove pork from the oven. Then turn down the oven to 325°F. Add potatoes to one side to the baking sheet. Add carrots to the other side of the baking sheet. Make sure to level the potatoes & carrots. Drizzle 2 tbsp extra virgin olive oil over the pork.

Cook for 1 hour (20 minutes per-lb) at 325°F. 

Remove pork from the oven and let rest for 15-20 minutes serving.

Ingredients
  

  • 3 lbs pork loin
  • 6 tbsp (divided) extra virgin olive oil
  • 2 tsp salt
  • 2 tsp black pepper
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 2 tsp dried thyme
  • 2 tsp dried rosemary
  • 2 lbs yukon gold potatoes cut into 1"
  • 1 lb carrots peeled & cut into 1"

Instructions
 

  • Preheat the oven to 425°F. Wrap the baking sheet in aluminum foil for easy cleaning later.

    Honey Orange Spiral Ham

    Remove the ham from the bag and discard the seasoning packet. Pat the ham with a paper towel. Wrap the ham in aluminum foil.

    Place ham on the roasting rack. Pour 2 cups of water in the bottom of the roasting pan. Preheat the oven to 325°F. Place the roasting rack in the roasting pan. Bake for 12-13 minutes per-pound. (I did mine for 13 minutes per-pound).

    In a sauce pan: combine honey, brown sugar, dijon mustard, orange marmalade and mix well.

    Turn up the heat to medium and bring to a simmer. Cook for 8-10 minutes or until the glaze thickens. Make sure to whisk frequently.

    In the last 30 minutes: remove ham from the oven. Unfold the aluminum foil from the ham. Coat the ham with the sauce (make sure to let it drizzle down between the ham slices). 

    Bake for 30 minutes uncovered. Remove and tent the ham for 10 minutes before serving. 

    Serve

    • 7-10 lbs bone-in spiral ham
    • 2 cups water

    Glaze

    • 1 cup orange marmalade
    • ½ cup honey
    • 2 tbsp brown sugar
    • 2 tbsp Dijon mustard

    Instructions
     

    • Preheat the oven to 325°F. Place the roasting rack in the roasting pan.

      Slow Cooker Pork Loin with Honey Garlic Glaze

      In a small bowl: combine all the rub ingredients together and mix.

      Rub olive oil all over the loin.

      Coat the pork loin wit the rub seasoning. Then transfer the loin into the slow cooker. 

      In a separate bowl: add honey, apple cider vinegar, garlic and mix.

      Pour the honey garlic mixture over the loin.

      Slow cook on low for 4-5 hours (1 hour per lb) or until tender. Transfer roast to a bowl/plate. Cover with saran wrap until ready to serve.

      In a small bowl: combine cornstarch with cold water. Mix until the cornstarch has dissolved. Transfer the remaining liquid from the slow cooker to a sauce pan. Heat the pan to medium-high. Add the cornstarch mixture to the pan. Be sure to stir frequently until the mixture has dissolved to form the sauce.

      Turn down the heat to medium and cook for addtional 6-8 minutes or until the sauce has thickened to your preference. Season with salt to taste. Optional: place a mesh/strainer on top of a bowl. Pour the gravy through the strainer. Alternative: Place a mesh/strainer on top of a bowl. Pour the broth through the strainer. Transfer the liquid to a sauce pan and heat to medium-high. Add cornstarch mixture and stir. Turn down the heat to medium and cook for addtional 6-8 minutes or until the sauce has thickened to your preference.

      Slice

            Quiche Lorraine

            Baked Quiche Lorraine is a smooth delicious meal that is presented beautifully presented in the shape of a tart. This recipe is popular for brunch and festive occasions. Th body of the Quiche is creamy, smooth and delicious.             Preheat the oven to 400°F. Pie Crust: homemade or store bought (follow the instructions on the box as directed). In a 9″ tart pan: roll out the crust, place it in the pan and gently press to form the shape of the tart pan. Cut any crust that is hanging over the edge. Transfer the tart to a baking sheet.

            Prick the crust with a fork. Place parchment paper on top.

            Then, add pie weights or dried beans (2 lbs) atop of the parchment paper. Bake the crust for 10 minutes. Remove the parchment paper and the pie weight/beans. Let cool for 20 minutes (see video for reference).

            Drop the oven temperature to 375°F. Cook the bacon until crispy. Transfer to a plate with paper towel. Then chop into chunks. Shred gruyere cheese and set aside. Spread half of the chopped bacon on the crust.  

            Add shredded cheese.

            Add the other half of the bacon. Add chopped onions.

            Eggs, heavy whipping cream, salt & pepper

            Whisk.

            Slowly and carefully pour the egg mixture over the cheese and bacon to ½ below the rim. 

            Bake for 30 minutes or lightly golden brown. Test for doneness: place toothpick in the center and when it comes out clean it is done. 

            Remove from the oven and let rest for 15 minutes before removing rim.

            Slice

            • 9" pie crust store bought or homemade
            • 8 sliced bacon
            • 4 large eggs
            • 1 cup freshly shredded gruyere cheese
            • 1 cup heavy whipping cream
            • ¼ cup chopped red onions chopped
            • ½ tsp salt
            • ¼ tsp black pepper

            Instructions
             

            • Preheat the oven to 400°F.
            • Pie Crust: homemade or store bought (follow the instructions on the box as directed). In a 9" tart pan: roll out the crust, place it in the pan and gently press to form the shape of the tart pan.
