Ingredients
  

  • 2 lbs whole mushrooms
  • 6 garlic cloves minced
  • 6 tbsp unsalted butter melted
  • 2 tbsp olive oil
  • ½ tsp salt
  • ½ tsp pepper

Instructions
 

  • Preheat the oven to 425°F.
  • Clean and rinse the mushrooms. Trim the tips of the mushrooms.
  • In bowl: add whole mushrooms, melted butter, garlic, olive oil, salt, pepper and mix. Transfer the mushrooms to a baking sheet.
  • Bake for 20 -25 minutes

    • 4 sweet potatoes 6 – 8 oz each

    Instructions
     

    • Preheat the oven to 425°F.
    • Clean and scrub the potatoes until all dirt has been removed. Pat dry with a paper towel. Sweet potato prep: Use a fork to pierce them thoroughly. Place on a baking sheet.
    • Bake for 40 – 45 minutes or until soft & tender.

    Slice and serve with butter, salt & pepper. Enjoy!

      In a bowl: whisk melted butter, garlic, parsley until well mixed.

      Spread ½ cup of the pizza sauce over the bottom halves of the sliders.

      Sprinkle ¾ cup mozzarella cheese next.

      Then layer with pepperoni.

      Sprinkle the rest of the mozzarella for the next layer. Then add grated Parmesan cheese to your liking. Finally drizzle the rest of the pizza sauce over the cheese layers. Sprinkle oregano on top.

      Then, top with the upper halves of the sliders. Then brush or spread the butter mixture over the top of the rolls.

      Bake for 15-20 minutes or until the cheese has melted.

      Serve immediately and enjoy!

      Pepperoni Pizza Sliders

      Ingredients
        

      • 12 Hawaiian rolls
      • 1 ½ cups shredded mozzarella cheese divided
      • 1 cup pizza or marinara sauce divided
      • ½ cup grated Parmesan cheese
      • 6 oz pepperoni slices
      • ½ tsp dried oregano

      Butter Topping

      • 2 tbsp melted butter
      • 1 tsp dried parsley
      • ½ tsp garlic powder

      Instructions
       

      • Preheat the oven to 350°F.
      • Don’t pull the rolls apart. Cut them in half horizontally. Place the top halves aside and bottom halves in the baking pan (coat the bottom of the pan with cooking spray).
      • Spread ½ cup of the pizza sauce over the bottom halves of the sliders. Sprinkle ¾ cup mozzarella cheese next. Then layer with pepperoni. Sprinkle the rest of the mozzarella for the next layer. Then add grated Parmesan cheese and oregano. Finally drizzle the rest of the pizza sauce over the cheese layers.         Horiatiki Greek Salad

        Greek salad is a personal favorite, so I am constantly looking for ways to tweak it or change it up a bit. I really enjoy Horiatiki style as it comes with gorgeous hunks of smooth cheese and my favorite cucumbers. This is a crunchy salad that is full of flavor that I believe you could proudly enjoy standalone or with a main entree like shawarma.         Thinly slice the red onion. Place onion slices in ice water with 1 tsp of white vinegar.

        Slice the cucumber; Optional: remove the cucumber’s skin. 

        Remove the core and seeds from the bell pepper then slice thinly.

        Cut the tomatoes into wedges.

        In a large bowl: Place the sliced cucumbers, tomatoes wedges, sliced bell peppers, sliced purple onion (make sure to squeeze out the excess liquid).

        Greek pitted kalamata, extra virgin olive oil & red wine vinegar.

        Oregano, salt and black pepper.

        Then gently toss the salad together.

        Transfer the vegetables to a serving platter.

        Place the Greek Feta Cheese Block in the center.

        Garnish w/ salt, pepper, oregano, and olive oil. 

        Or break the feta block into big chunks.

        Serve with bread.

        • 3 ripe tomatoes
        • 1 English cucumber
        • 1 purple onion
        • 1 green bell pepper
        • 1 greek feta cheese block
        • ¾ – 1 cup greek pitted kalamata
        • ¼ cup extra virgin olive oil
        • 1 tbsp red wine vinegar
        • 1 tsp dried oregano
        • salt & pepper to taste

        Instructions

          Cuban Black Beans

          Delicious filling and best of all affordable Cuban Black Beans are perfect on any occasion. We enjoy our multi culture infused recipes and this Cuban Black Bean is one of our favorites. You can buy dry black beans in bulk and they keep forever if stored properly. This goes great with rice or as a side with almost any entree.

          Rinse and drain beans. Discard any debris. Soak dried beans for as least 8 hours or overnight. Drain liquid. Place soaked beans in a dutch oven or pot. Add 8 cups of water. Heat to high and bring it to a boil, then turn down the heat to medium heat. Cook for 1 hour uncovered. Stir occasionally.

          Meanwhile: chop onions, garlic & bell pepper (discard the seeds & core). In a separate pan: add oil and turn up the heat to medium. Add chopped onions & bell peppers. Sauté for 8-10 minutes or until they are wilted.

          Add minced garlic and sauté for 30-45 seconds or until fragrant. Add salt, cumin, oregano, bay leaf and mix everything together. Turn off the heat.

          After 1 hour later: scoop out 1 cup of black beans from the pot. Transfer the beans to the vegetable pan.

          Use a fork to smash the beans.

          Mix everything together.

          Then place the sautéed vegetables in the pot with the rest of the black beans. Add 1 cup of water and stir everything very well.

          Cook for another 1 ½ – 2 hours or until the beans are tender and soft.

          Stir occasionally and add extra water as needed. Most of the water should have evaporated. Turn off the heat.

          Discard bay leaf and season with salt if needed.

          Serve with white rice.
